Chicken & sweetcorn pasta bake

Ingredients
Serves 4
- Chicken breast fillets400g
- Penne / fusilli400g
- Frozen sweetcorn200g
- Semi-skimmed milk500ml
- Plain flour40g
- Butter40g
- Mature cheddar100g
Plus salt and pepper. About £5.09 for the amounts used.
Method

Heat the oven to 200°C (180°C fan, gas 6).

Cook 400g pasta for 2 minutes less than the pack says, then drain.

Cut 400g chicken breast into chunks and fry in a little oil for 6-8 minutes until cooked through.

Melt 40g butter, stir in 40g flour, then whisk in 500ml milk until thick. Stir in 60g of the grated cheddar, the chicken, the pasta and 200g frozen sweetcorn.

Tip into a baking dish, top with the remaining cheese and bake for 20 minutes until golden.
