Sausage & sweet potato tray bake

• Pork sausages (8 pack)8
• Sweet potatoes800g
• Mixed peppers (3 pack)2
• Brown onions200g
• Vegetable oilstore cupboard30ml

Plus salt and pepper. About £3.56 for the amounts used.

Method

   Heat the oven to 200°C (180°C fan, gas 6).

   Cut 800g sweet potatoes into chunks, 2 peppers into strips and 2 onions into wedges.

   Toss the veg with 2 tbsp oil, salt and pepper in a large roasting tin. Add 8 sausages.

   Roast for 35-40 minutes, turning everything halfway, until the sausages are cooked through and the veg is soft and caramelised.
